La primavera e l&#8217;estate simboleggiano la rinascita della natura e il loro arrivo porta con s\u00e9 molti nuovi frutti e ortaggi. <\/p>\n<p>Coltiviamo basilico, aglio, asparagi, bietole, melanzane, peperoni, peperoncini, prezzemolo, mele (che sono, in un certo senso, il simbolo di Badia di Pomaio) e fragole. Coltiviamo anche un&#8217;ampia variet\u00e0 di pomodori, come i pomodori a coste, i pomodori &#8220;San Marzano&#8221; e i pomodori a bistecca. <\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone wp-image-4950\" src=\"http:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1.jpg\" alt=\"\" width=\"700\" height=\"1049\" srcset=\"https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1.jpg 1001w, https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1-200x300.jpg 200w, https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1-683x1024.jpg 683w, https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1-768x1151.jpg 768w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>Di particolare interesse \u00e8 l&#8217;aglione, una variet\u00e0 di aglio gigante tipica delle zone toscane della Val di Chiana e della Val d&#8217;Orcia. Era molto conosciuto dagli Etruschi e dai Romani, che lo utilizzavano soprattutto per le sue propriet\u00e0 terapeutiche, ma a volte \u00e8 quasi scomparso nei secoli successivi. Oggi, pur essendo ancora in via di estinzione, l&#8217;aglione \u00e8 tornato in auge in questo angolo di Toscana, dove \u00e8 apprezzato per il suo sapore dolce e delicato.  <\/p>\n<p>Viene utilizzato soprattutto per preparare un piatto tipico di questa regione: i &#8220;pici all&#8217;aglione&#8221;.<\/p>\n<p>La prima menzione dei &#8220;pici&#8221; \u00e8 stata trovata nelle decorazioni di una tomba etrusca, il che li rende uno dei tipi di pasta pi\u00f9 antichi d&#8217;Italia. Si tratta di spaghetti spessi ottenuti da un semplice impasto di farina, acqua e sale e tagliati in forme irregolari. Grazie al suo sapore delicato e armonioso, l&#8217;aglione (mescolato alla salsa di pomodoro e condito con una generosa dose di peperoncino) \u00e8 il condimento perfetto per questa pasta.  <\/p>\n<p>Potrebbe sembrare impossibile, ma la cucina toscana primaverile ed estiva \u00e8 ancora pi\u00f9 ricca e varia di quella autunnale. Il piatto che tutti, senza eccezione, preparano durante i mesi pi\u00f9 caldi \u00e8 la &#8220;Panzanella&#8221;. <\/p>\n<p>La panzanella risale al XVI secolo, anche se la sua composizione \u00e8 cambiata un po&#8217; nel corso dei secoli (ad esempio, i pomodori sono un ingrediente comune al giorno d&#8217;oggi, ma all&#8217;epoca erano utilizzati esclusivamente come piante decorative). Rappresenta uno dei punti fermi della cucina toscana: in cucina non si butta via niente. L&#8217;ingrediente principale della &#8220;Panzanella&#8221; \u00e8 infatti il pane raffermo e non \u00e8 difficile immaginare il perch\u00e9. Quando le bocche da sfamare erano tante e i soldi pochi, il pane era un bene economico da comprare e facile da preparare.
