C&rsquo;est l&rsquo;abr\u00e9viation de \u00ab\u00a0Denominazione di Origine Protetta\u00a0\u00bb (appellation d&rsquo;origine prot\u00e9g\u00e9e). Il permet de garantir que tous les fromages italiens &#8211; et d&rsquo;autres produits alimentaires \u00e9galement &#8211; portant ce label sont produits localement &#8211; avec des ingr\u00e9dients cultiv\u00e9s localement &#8211; et conditionn\u00e9s localement. Aujourd&rsquo;hui, apr\u00e8s de longs si\u00e8cles de production, le Parmigiano Reggiano entretient un lien durable avec son territoire et sa r\u00e9gion. Presque tout le monde reconna\u00eetra le Pecorino Romano, qui est utilis\u00e9 dans les p\u00e2tes carbonara (et aucun autre fromage ne fera l&rsquo;affaire !).
