Le printemps et l&rsquo;\u00e9t\u00e9 symbolisent la renaissance de la nature et leur arriv\u00e9e s&rsquo;accompagne de nombreux nouveaux fruits et l\u00e9gumes. <\/p>\n<p>Nous cultivons du basilic, de l&rsquo;ail, des asperges, des blettes, des aubergines, des poivrons, des piments, du persil, des pommes (qui sont en quelque sorte le symbole de la Badia di Pomaio) et des fraises. Nous cultivons \u00e9galement une grande vari\u00e9t\u00e9 de tomates, comme les tomates \u00e0 c\u00f4tes, les tomates San Marzano et les tomates Beefsteak. <\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone wp-image-4950\" src=\"http:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1.jpg\" alt=\"\" width=\"700\" height=\"1049\" srcset=\"https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1.jpg 1001w, https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1-200x300.jpg 200w, https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1-683x1024.jpg 683w, https:\/\/badiadipomaio.com\/wp-content\/uploads\/2021\/03\/Pomaio-Orto-LR-15-1-768x1151.jpg 768w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<p>L&rsquo;aglione, une vari\u00e9t\u00e9 d&rsquo;ail g\u00e9ant typique des r\u00e9gions toscanes du Val di Chiana et du Val d&rsquo;Orcia, pr\u00e9sente un int\u00e9r\u00eat particulier. Il \u00e9tait bien connu des \u00c9trusques et des Romains, qui l&rsquo;utilisaient surtout pour ses propri\u00e9t\u00e9s th\u00e9rapeutiques, mais il a parfois failli dispara\u00eetre au cours des si\u00e8cles qui ont suivi. Aujourd&rsquo;hui, bien qu&rsquo;il soit encore menac\u00e9, l&rsquo;aglione a fait son retour dans ce coin de Toscane, o\u00f9 il est appr\u00e9ci\u00e9 pour sa saveur douce et d\u00e9licate.  <\/p>\n<p>Il est principalement utilis\u00e9 pour pr\u00e9parer un plat typique de la r\u00e9gion : les \u00ab\u00a0pici all&rsquo;aglione\u00a0\u00bb.<\/p>\n<p>La premi\u00e8re mention des \u00ab\u00a0pici\u00a0\u00bb a \u00e9t\u00e9 trouv\u00e9e dans les d\u00e9corations d&rsquo;une tombe \u00e9trusque, ce qui en fait l&rsquo;un des types de p\u00e2tes les plus anciens d&rsquo;Italie. Il s&rsquo;agit de spaghettis \u00e9pais fabriqu\u00e9s \u00e0 partir d&rsquo;une simple p\u00e2te compos\u00e9e de farine, d&rsquo;eau et de sel et coup\u00e9s en formes irr\u00e9guli\u00e8res. Gr\u00e2ce \u00e0 sa saveur d\u00e9licate et harmonieuse, l&rsquo;aglione (m\u00e9lang\u00e9 \u00e0 de la sauce tomate et assaisonn\u00e9 d&rsquo;une g\u00e9n\u00e9reuse dose de piment) est le condiment id\u00e9al pour ces p\u00e2tes.  <\/p>\n<p>Cela peut sembler impossible, mais la cuisine toscane du printemps et de l&rsquo;\u00e9t\u00e9 est encore plus riche et vari\u00e9e que celle de l&rsquo;automne. Le plat que tout le monde, sans exception, pr\u00e9pare pendant les mois les plus chauds est la \u00ab\u00a0Panzanella\u00a0\u00bb. <\/p>\n<p>La panzanella remonte au XVIe si\u00e8cle, bien que sa composition ait quelque peu chang\u00e9 au cours des si\u00e8cles (par exemple, les tomates sont un ingr\u00e9dient courant de nos jours, alors qu&rsquo;\u00e0 l&rsquo;\u00e9poque elles \u00e9taient utilis\u00e9es exclusivement comme plantes d\u00e9coratives). Elle repr\u00e9sente l&rsquo;un des \u00e9l\u00e9ments de base de la cuisine toscane : dans la cuisine, on ne jette rien. L&rsquo;ingr\u00e9dient principal de la panzanella est en fait le pain rassis et il n&rsquo;est pas difficile d&rsquo;imaginer pourquoi. \u00c0 l&rsquo;\u00e9poque o\u00f9 les bouches \u00e0 nourrir \u00e9taient nombreuses et l&rsquo;argent insuffisant, le pain \u00e9tait une denr\u00e9e peu co\u00fbteuse \u00e0 acheter et facile \u00e0 cuire.
