Es la abreviatura de \u00abDenominazione di Origine Protetta\u00bb (denominaci\u00f3n de origen protegida). Es una forma de garantizar que todos los quesos italianos -y tambi\u00e9n otros alimentos- que llevan esta etiqueta se producen localmente -con ingredientes cultivados localmente- y se envasan. Hoy, tras largos siglos de producci\u00f3n, el Parmigiano Reggiano mantiene un v\u00ednculo imperecedero con su territorio y su regi\u00f3n. Casi todo el mundo reconocer\u00e1 el Pecorino Romano, que se utiliza en la pasta carbonara (\u00a1y no hay otro queso que valga!).
